Instructions:
- Preheat oven to 300°. Cut two large squares of parchment paper and place on a large baking sheet. Grease with cooking spray.
- Into the center of 1 piece of parchment paper, place one peppermint candy. Surround with 2 concentric circles. Bake until the candies look glossy and slightly melted, about 7 minutes.
- Meanwhile grease 2 very small bowls (about 3” in diameter) with cooking spray and place bottom side up on working surface. Very carefully, invert the melted peppermints onto the inverted bowl, pressing against the parchment to make sure the peppermint is touching the bowl. Let set for a few minutes, then remove bowl.
- Serve with ice cream.
